Erik Bjarne Fristrup passed away suddenly on February 13, 2023. He was born on August 6, 1966 to Bjarne and Janet Fristrup. Erik was raised in Midvale, Utah and graduated from Hillcrest High School. He served a 2 year mission for the Church of Jesus Christ of Latter-day Saints in the Denmark Copenhagen Mission, where his father was born.
Erik married Kathy Hannay on August 8, 1988 in the Salt Lake Temple. They started their family in Kaysville where they had their 3 children. They later moved to Henefer to live their dream of living in the country.
Erik had a love for basketball that influenced him throughout his life. He spent countless hours in the gym with his kids, coaching Junior Jazz, to summer leagues, to high school basketball. The highlight was watching his boys win state championships. He was an avid Utah Jazz fan and didn’t miss watching many games. Erik was very competitive in all that he did and that wore off on his kids. He always taught, “you miss 100% of the shots you don’t take”.
As an active member of the Church of Jesus Christ of Latter-day Saints, Erik served in many callings including Young Men Leader, Scout Leader, bishoprics, and President of the Young Single Adult Branch. He had a special gift of making everyone his best friend, especially the youth. He influenced many lives. His testimony of the Gospel was solid and he shared it with those around him. He was able to receive inspiration and he always was quick to act on those promptings from the Lord.
His favorite hobbies included: Jeeping in Moab, jet skiing, golfing, camping, and anything involving his family and grandchildren. His family was the center of his world. He made sure they were always taken care of. He mostly enjoyed spending time with Kathy, driving their horses, taking road trips, shooting shotguns, and playing games around the kitchen table.
Summertime, you could find him in the field moving water lines wearing basketball shorts and muck boots, barbequing, on a bike ride with his kids and grandkids, or riding his scooter which he called the ‘Henefer Harley’.
Heaven must have been in a pinch because they pulled an all-star off the bench and put him back in the game.
He is preceded in death by grandparents, father-in-law, and nieces. He is survived by his wife Kathy, sons Devin (Tanna) Fristrup, Makay (Andrea) Fristrup, and daughter Brooke (Colby) Nelson, his parents, two brothers, three sisters, 6 grandchildren: Karver, Eliza, Emery, Boston, Ivy, Cannon, and one on the way.
The family wishes to express their appreciation to the Summit County first responders for their services. In lieu of flowers, the family requests you donate to the North Summit School District lunch program by calling 435-336-5654.
Funeral services will be held Saturday, February 18, 2023 at 12 noon, at the Henefer Chapel. Viewings will be held Friday from 6-8 p.m. and Saturday from 10-11:30 a.m. prior to the services.
